We were lucky enough to have the Lennons visiting us for Easter this year. It also happened to be Patrick's birthday on Easter Sunday, so we did a lot of celebrating. Easter brunch (which is my tradition), including baked french toast, egg casserole, and maple syrup bacon. Oh and then Patrick's special cake request for dessert--yellow cake with white chocolate chips and peanut butter frosting. Phew! Patrick claims it was his favorite cake ever. I honestly couldn't even bring myself to try it. It just didn't sound good to me.
Just when you thought the eating extravaganza was complete, Cathy (my mother-in-law) kicked in gear to make Easter dinner, (also Patrick's birthday dinner) complete with turkey, stuffing and scalloped potatoes. And if that doesn't fill you up just reading all that, Cathy also made her homemade, unbelievable, apple pie! Enough to prescribe yourself an immediate diet I know. Did I also mention that we had Easter basket hunts as well as an egg hunt, followed by candy eating (by the kids of course)? At the end of the day, we decided it was just one of those over indulgence days. Here are some snap shots from the day. To be fair, there are a lot more then some...
